Regarding the taste is a complex EVOO, balanced, smooth and sweet, slightly bitter and spicy, flavored green almonds, fresh grass, artichoke and green banana. This EVOO by classification is perfect to pair with any dish.

- EVOO Assembly early harvest, traditionally made from the Koroneiki olives, Arbequina and Arbosana varieties, collected manually on the second half of October to 500 m above sea level on the Mediterranean. Regarding the taste is slightly bitter and spicy, fluid EVOO, flavored green almonds, tomato leaf, artichoke, olive leaves and green banana. - Extraction System: Continuous two-phase cold system.
- Collection and processing techniques: Based on the quality criteria, only healthy olives are processed at the optimum maturation point and maximum 6 hours after being harvested, so that it is possible to optimize the performance and quality in the mill, without reaching temperature above 20º to guarantee extra virgin oil fresh and without defects.
- Color: Golden Green
- Aroma: In the nose is a medium intensity, reminds us to nuts such as walnuts or almonds without forgetting the ripe banana and a slight aroma of ripe tomatoes.
- Taste: Its sweet and pleasant entry with a bitter and spicy almost imperceptible typical of the varieties with it is made and gives way to a retronasal where we feel ripe tomato and nuts.
- Pairing: We are faced with a green-mature balanced, harmonious evoo that fits with any tomato soup, vegetables, meats, salads, and of course fish.

- Aroma: In the nose it appears between green and ripe with a medium high intensity that reminds us of the fig leaf, the olive leaf or rucula, its mature notes transfer us to the black olives.
- Taste: An extra virgin olive oil in the scale of the intense with a bitter and spicy taste but at the same time balanced, pleasant and with a medium fluidity. It has a slight astringency typical from this variety and most importantly it leaves a clean mouth.
- Pairing: An evoo ideal for grilled vegetable, ajorriero, read meats o homemade cooking’s, combines perfect with Mediterranean breakfast “bread, oil and salt” and for done a healthy fried.
